My favorite fall activity by far is going apple picking. There’s something so fun and nostalgic about walking among the trees, climbing the branches, and picking out your favorite apples.

Of course, there’s more to apple picking than just pulling the sweet fruits off the trees. You also have to eat some delicious cider donuts and drink that freshly brewed hot apple cider.

If you’re anything like me, though, chances are you get a little carried away when you go to the orchard. No matter how hard I try, I always get home and realize I have way too many apples.

If you also have too many apples lying around your kitchen, try these three recipes!

Pickled Apples

Combine water, salt, maple syrup, pickling spices, and white wine in a pot. Let it simmer. Cut, core, and chop apples, then combine them with star anise. Strain the pickling liquid over the apples, and let them sit until cool.

Stewed Apples

Peel, core, and slice apples. Put them in a pan with 1 tbsp. butter, lemon juice, allspice, raisins, and brown sugar. Simmer.

Apple Salsa

Core and dice apples. Put them in a pan with allspice, 1 tbsp. butter, lime zest, lime juice, red pepper flakes, and honey.
